Weasel Coffee, as it is known in Vietnam, is the rarest and most expensive coffee in the world. Also known as Civet Coffee or Kopi Luwak in Indonesia this coffee is truly one of the best tasting coffees ever 'produced'. So you might be wondering, exaclty what role does the Civet play in the production of this wonderful coffee? Well, without being too graphic, the digestive system of the animal causes the raw coffee pit to go through a remarkable transformation on its magical journey. Once expelled the pits (beans) are collected, carefully washed, and roasted to perfection. Only 400 pounds or so of this coffee are produced per year making it very hard to come by and expensive (upwards of $100 per pound unroasted). Happily a company in Vietnam named Trung Nguyen has found a way to synthetically reproduce this fantastic product through a patented process that mimics the original perfectly and at a much lower cost, only around $16 per pound roasted.
